My goal during this quarantine is to share recipes that use things you already have in your refrigerator or pantry.  Let’s keep it easy and fun!

These sheet pan meals have been my go-to lately. They’re SO easy, use what you already have in your house, are customizable, and the clean-up is non-existent.

Here is the recipe for this sheet pan meal:

INGREDIENTS
1 package of chicken sausage (Wegmans Wild Mushroom and Herb is what we used)
1 bag of broccoli (any type of veggie)
1 large sweet potato (use any starch)
Olive oil
Sea salt and pepper
Extra spices (we used Italian seasoning and red pepper flakes)
1 bag cauliflower rice (or your favorite carb for a base)

RECIPE
Put foil on top of your favorite sheet pan
Cut up the broccoli, sweet potatoes, chicken sausage
Spray the foil
Lay the broccoli, potatoes and sausage on the pan, spreading them out
Drizzle olive oil over all the ingredients
Sprinkle sea salt, pepper, seasonings on top
Bake at 400 degrees for 20 minutes
Let cool, serve over your favorite carb (we chose Palmini noodles)

This meal was filling, contained great nutrients and was so simple.  I will feature more of our favorite sheet pan meals on the blog!
